    Excerpts from  Fat Is Not The Enemy
    Chapter Three    Heart disease, diabetes, and fat

         So far, I've discussed dietary fat in terms of how it might affect body fatness. I've also discussed body fatness in terms of how it might affect your health. I'm going to move away from issues of body fatness to an in depth discussion of dietary fat and health. Perhaps I've convinced you that eating fat will not necessarily make you fat, but you're probably still thinking, everyone knows that fat is bad for your health, and will give you heart disease, and maybe even cancer. In this chapter and the next I will discuss the truths and the falsehoods in these sorts of beliefs, and whether or not it is really desirable to lower the total level of fat in our diets.

         It will probably help if you keep in mind that all nutrients are beneficial in the correct amounts, and harmful in excess. Water is good for you, but you can kill yourself by drinking too much water. Vitamins are good for you, but too much vitamin A, D, or B6 can be toxic. Similarly, the fact that eating only fat would not be good for you does not preclude fat being an essential part of a well balanced diet. In this chapter I will try to convince you that the total level of fat in your diet is not the most important determinant of health. What is more important is eating the right types of fat. Subsequent chapters will describe in detail what saturated fat is, and why it is bad for you, and what unsaturated fats are, and why they are good for you.
